Honey Mustard Chicken

My husband's parents left yesterday morning to fly back to Michigan.  We had a great time while they were here, but I am now back in my kitchen!!

Last night's menu:

Honey Mustard Chicken

Stove Top Stuffing
Brussels Sprouts


I started by preparing the chicken.  I used chicken breasts that still had skin and bones, but I took off all of the skin.

I then dipped the chicken breasts in honey mustard sauce and then in corn flake crumbs.

I then placed the chicken on a sprayed cookie sheet and cooked them at 350* for 30 minutes.


While the chicken was cooking I prepared the stuffing.  I began by combining the stuffing mix with hot water and mixing it up.  I then placed some butter on the top.

I then covered the bowl and cooked it in the microwave for about 6 minutes.

I also cooked Brussels sprouts in the microwave, in a steamer bag.

So, overall I would say that the meal was:

Honey mustard chicken- A definite hit!!  (one of my favorite ways to eat chicken)
Stove-Top Stuffing- A definite hit!! (YUMMY)
Brussels Sprouts- A definite hit!! (one of my favorite veggies)

The Red Elephant

My husband's parents are visiting from Michigan.  They arrived on Saturday afternoon and are staying through Wednesday afternoon.  This is very exciting!!  It means that we have a lot more people around and a lot more dining out.

Last night we went to The Red Elephant Pizza and Grill.



I ordered a Classic Burger with American  cheese and it was very good.  I also got an elephant ear for dessert and that was as equally delicious!!

We will definitely be going back to the Red Elephant in the near future (Thank You Nancy!!)

My husband came home from California yesterday afternoon, so to celebrate his return we got take out from Cabo Taco Mexicali Grill.

I got Tequila Lime Chicken Tacos & homemade tortilla chips.
I absolutely LOVED what I ordered!!!

Turkey Double Cheeseburger

Last night I made Turkey Double Cheeseburgers for dinner.

I began by defrosting my Turkey burgers in the microwave.

When they were mostly defrosted I baked them in the oven at 350 for 20 minutes.



I then put cheese on them and let the cheese melt in.  When the cheese had melted I prepared my thinwiches like I would a hamburger bun and placed the patties on the thinwich.

Petite Lasagnas

Last night I made Petite Lasagnas for dinner.  I got this recipe from JenMarissa off of YouTube.

I began by spraying my muffin pan with cooking spray.  I then put a wonton wrapper into each cup and pressed them down firmly.
Next, I browned my ground meat, then drained it and added garlic and oregano.


I then added a 14.5 ounces of crushed tomatoes to the ground meat, brought it to a boil and then let it simmer on low for about 10 minutes.

While the meat mixture was simmering I prepared the cheese mixture.  I combined 1 1/2 cups of Ricotta cheese with some basil and oregano.

When the meat was ready I began assembling my lasagnas.  I started by putting about a tablespoon of the cheese mixture into the bottom of the cups.

I then put about a tablespoon of the meat mixture on top and sprinkled it was some mozzarella cheese.



I then repeated the process by adding another layer of wonton wrapper, ricotta cheese mixture, meat mixture and topped it off with mozzarella cheese.



I then baked them in a 350 degree oven until they were  browned and the cheese was melted.

Breakfast

Last night I made breakfast for dinner!!

I began by cooking my sausage links. 



I put them in my pan with a little bit of water and cooked them until the water evaporated.  I then cooked them for about 10 more minutes, until they reached 165 degrees.  I then took them out of the pan and placed them on a paper towel lined plate.

Next I cooked my eggs.  I cracked my eggs and put them into the same pan that I had cooked my sausages in.

I cooked them until the whites were no longer runny then I flipped them.  One of my eggs flipped perfectly.  The other one's white folded onto itself when I flipped it so that one's white became like scrambled eggs, but the yolk and the other egg came out perfectly sunny side up.

Finally it was time for my waffles.  When I make waffles I tend to double the batch and freeze the leftovers so we'll have them whenever we want them. 

So, I had some frozen waffles in the freezer that I just had to pop in the toaster.

Veggie Pasta Salad

Last night I made a vegetable pasta salad for dinner.

I began by prepping all of the vegetables.  I peeled and cubed 2 cucumber, and cut a head of broccoli and cauliflower into small bite size florets. I then added them along with some cherry tomatoes to a large bowl.

Next, I cooked, drained and cooled  my pasta.



Finally, I combined the pasta with the vegetables and added my dressing.  A mix of zesty Italian salad dressing and a ranch powdered dressing mix.


I then mixed the dressing, pasta and veggies together, covered the bowl with some aluminum foil and put it in the fridge for several hours.

Crumb Baked Fish

Last night was my first night of 5 that I will be cooking for just me :(  My husband is working out of town this week, so I get to cook what I like, and not just things that he'll eat.

Last night I made a repeat from my blog:
Crumb baked Fish
Garlic Noodles
Sweet Corn

I began by mixing together milk and salt into a bowl, and ritz cracker crumbs and parmesan cheese into another bowl.



I then prepped my glass baking dish by spraying it with cooking spray.

I then dipped my fish into the milk and then into the crumb mixture.  I made sure to press the crumbs into the fish so they would stick.  I then placed the fish into the prepared baking dish and drizzled it with melted butter.

I then baked the fish for 15 minutes at 500 degrees.

While waiting for the fish I began preparing my pasta.

I began by boiling milk and butter in a pan.


 When it began boiling I added the pasta and the sauce mix to the pan and let it continue to boil for 11 minutes.


When my pasta was finished I began on my corn.  I used a frozen single serving packet of corn, so I just had to cook it for 1 1/2 minutes.

By the time my corn was finished so was the fish and pasta.

So, overall my tally was:

Crumb baked fish- Neither a hit or a miss. (The fish was to fishy tasting for me, I don't know if I didn't cook it enough or if it was a different type of fish)

Garlic Pasta- Neither a hit or a miss (it was okay, but it wasn't absolutely wonderful)

Sweet corn- A definite HIT!! (the corn was wonderful!!)

La Nopalera

My husband left this morning to go out of town for work, so last night for dinner we got take-out from a local Mexican restaurant called La Nopalera.

It was very good.

My husband ordered Tostadas (along with many other things) but they came with sour cream, so he wouldn't eat them.  He ended up giving them to me and they were VERY YUMMY!!




I ordered the # 14 which consists of a burrito, an enchilada and a tamale.
I didn't end up eating it because I thought that it would be good reheated, so I ate the tostadas instead.
