Last night's menu consisted of:
Crumb baked Tilapia
Roasted Broccoli
Parmesan Rice &
Strawberries
The fish was VERY easy to prepare!! I just dipped the fillets into some milk,dipped them into some Ritz cracker crumbs and parmesan cheese, placed them into the glass baking dish and sprayed them with cooking spray.
This was before I cooked them!!
The Roasted Broccoli started out easy, but ended up not being so easy. I used fresh broccoli that I had cut into spears. I placed them into a bowl and added some olive oil, salt, pepper and minced garlic. I tossed the broccoli with the seasonings and then poured them out onto a sprayed baking sheet. I then drizzled the top with a little bit more olive oil.
They ended up looking like this before baking, still pretty good!!
I then put them into the oven with the fish, and this is where the problems started :( I checked the broccoli every 10 minutes and stirred them around so they wouldn't burn, but they still burnt, they even set off the smoke detectors :( YIKES!!!
Well, here is what they ended up looking like:
The Parmesan rice was REALLY EASY!! I just used the boxed Rice-A-Roni whole wheat Parmesan rice mix and followed the directions. (My husband insists on having a "starch" with pretty much every meal, so here is his starch).

Okay, so overall I would say that the tally is:
Crumb baked Fish- A definite HIT!!
Roasted Broccoli- A definite MISS!! (but, we will try it again)
Parmesan Rice- A HIT!! (how can it not be, it came out of a box?)
Strawberries- A definite HIT!!
Well tonight I am making Shepherd's Pie with ground Turkey, so we'll see how that goes on tomorrow's blog :)
