Chicken Broccoli Alfredo

Last night's menu consisted of:

Chicken Broccoli Alfredo
Pumpkin Spice Fettuccini Noodles

This meal is what I call a "semi-homemade" crock pot meal.  It was relatively easy to make.  I began with boneless skinless chicken breasts.



I prepared the chicken by trimming off the fat and then cutting it them into bite size pieces.
I then put the chicken into the crock pot along with 2 jars of Alfredo sauce.


I then added a bag of frozen broccoli florets to the chicken and Alfredo sauce mixture.

I cooked the mixture for 2 hours, then I added 5 slices of provolone cheese and about a cup of grated Parmesan cheese.  I then cooked it for an additional 30 minutes.



While the Alfredo was finishing up I began on the fettuccini.  We had bought some Pumpkin Spice Fettuccini at a specialty shop in our area a few months ago so we decided to use that.


I cooked the fettuccini in boiling water for 4 minutes and then drained it.

So, overall I would say that the tally is:

Chicken Broccoli Alfredo- A definite HIT!! (It was absolutely delicious!!)
Pumpkin Spice Fettuccini- A near hit? (My husband loved it, I would have preferred unflavored noodles with the alfredo)
