Chicken Margherita

Last night I made Chicken Margherita for dinner.  The recipe that I had called for breaded chicken cutlets.  Well, I am trying my darnedest to loose a crazy amount of weight so I had to healthy them up.

I began by baking my chicken breast tenders in the oven earlier in the day, so they would be ready when it was dinner time.
About 30 minutes before we planned on eating I poured a jar of pasta sauce with veggies in it over the top of my cooked chicken.  I then sprinkled some mozzarella cheese over the top of where the chicken was.
I then baked the chicken again in a 375* oven for about 30 minutes.
While the chicken was baking I cooked my pasta.

After the chicken was finished I covered the pan with some aluminum foil so I could keep it warm while I baked my garlic bread.

Wet Burritos

Last night we had Wet Burritos for dinner!!

I began by cooking  a pound of ground beef.
I then drained the meat and added some onions to the pan.
I cooked them until they were translucent and soft.  I then added about a tablespoon of diced green chilies and also a can of re-fried beans.

I stirred the mixture until the beans and the meat were thoroughly combined.



 I then set to work on my sauce.  I combined a can of  tomato soup, a can of chili with no beans and also a can of enchilada sauce.
I stirred to combine then and then heated them until they were boiling.


We are now ready to make our wet burritos.  My husband warmed the tortillas in the microwave, so they were all set and ready to go.

I began by placing a warmed tortilla on my plate.
I then put a small amount of the meat and bean mixture onto my tortilla.
Cheese was then added on top of the meat.







I then folded the sides of the tortilla over the meat and flipped it seam side down onto the plate.

The sauce mixture was then spooned over the top of the tortilla.
I then topped it off with cheese.
I then heated it in the microwave for about 30 seconds to melt the cheese.
We then topped them however we wanted.  I also made Mexican rice, and my husband cut up an avocado.

So, how was it?

Wet Burritos- DELICIOUS!!!
Mexican Rice- I hated it, my husband loved it!


Chicken Pasta

To prep for my chicken pasta I baked some chicken thighs in the morning so they would be cooked and cooled by the time I needed them. 

I also cooked my pasta ahead of time, so it would be ready when the sauce was.

Now onto the sauce.  I added mushrooms, chopped onion, Italian seasoning and a can of diced tomatoes to a large skillet.  I cooked this until the onions were translucent and everything was soft and combined.


While the sauce was cooking I diced my chicken thighs.
When my sauce started bubbling I added the diced chicken and let it heat up.

Once the chicken was incorporated and warm I added my pasta.

I cooked the pasta in the sauce until everything was combined as well as heated through.  I added Parmesan cheese to the top right before serving it.

I served a mixed vegetable blend with the pasta.

So, how was it?

Chicken pasta- My husband and I both loved it!!
Mixed Vegetables- My husband really liked them, but I didn't like them at all!!!  They were pre-seasoned and I hated the seasoning mix.

Strawberry Shortcake (my way)

This weekend I made Strawberry Shortcake!!

I began by making biscuits.

I mixed Bisquick baking mix with some milk and I mixed it until combined.

I then placed golf ball sized balls of dough on a sprayed baking sheet and baked them until they were golden brown.

To make my strawberry sauce I simply used a bag of frozen strawberries.  I placed them in a small pot on my stove with some sugar and used a masher to break up the berries and mix in the sugar.



To assemble my shortcake I crumbled up one of my biscuits into the bottom of a bowl.
I then topped it with my strawberry sauce.

I then finished it off with some whipped cream.

So, how was it?

I loved it!!!








Grilled Italian Chicken

I began with chicken drumsticks.

I placed the chicken in small Ziploc baggies and covered them with Italian dressing.



I then put them in the refrigerator for several hours.

When we were ready to eat my husband grilled the chicken legs, basting them as he went with some of the leftover Italian dressing.


I also made a pasta side to go along with the chicken.

I had some steamed corn with mine, my husband had a tossed salad.






















So, how was it?

It was absolutely delicious!!
