Southwestern White Chicken Chili

Last night's dinner menu:

Southwestern White Chicken Chili
Corn Muffins

Everything from this meal started from a box :(
 

I began with the chili.  I added 4/12 cups of water to a large pot and then whisked in the chili mix.


I brought the mixture to a boil and continually stirred it for 2 minutes.  I then put the lid on and let it simmer for around 20 minutes.

While the chili was simmering I started on my corn muffins.
I added milk and an egg to the mix and combined them together.
 

I then put the muffin mixture into a ziploc baggie and snipped the corner off of it.  I then squeezed the mixture into my muffin liners without making a huge mess!!
I then put them into a 350* oven for 15 minutes.



The muffins and the chili ended up being done at the same exact time.
