Oven Baked Chimichangas

Last night's dinner menu:

Oven Baked Chimichangas
Avocado
Tomatoes
Mexican Rice

I began by precooking 3 chicken breasts.  I then cut them into bite sized pieces.

I then added 1 cup of cheese, spices, salsa and green onions


 
Everything in the bowl:


I then mixed everything together.


I then prepared my baking sheet by covering it with aluminum foil and then spraying the aluminum foil.

I then got out my flour tortillas and put 1/2 cup of the chicken mixture on each tortilla and then folded them up.
 

I continued until all of the chicken mixture was gone.


I then baked them until they were toasty brown.


I served then chimichangas with Mexican rice, avocado & tomatoes.

So, overall I would say that the tally is:

Oven baked chimichangas- A definite hit!!!
