Sushi

Yesterday was not a good day for my husband and I.  I'm not going to go into detail here, but if you would like more info you can find it at my other blog Our Journey with Infertility


My husband picked up sushi for dinner on his way home from work, because he knows how to cheer me up.  He went to a place called Yummy Sushi.

Crispy Chicken

Last night's dinner menu:

Crispy Chicken
Mom's Famous Green Beans
Chicken Pasta

I began with boneless, skinless chicken breasts.  I then put a can of evaporated milk in a bowl with some salt and pepper and then I put some cornflake crumbs in another bowl.

I then dipped my chicken in the evaporated milk and then again in the cornflakes.  I then placed them on a sprayed baking sheet.

I put the chicken in a preheated 400* oven for 17 minutes.



Cooked Chicken
While the chicken was cooking I prepared my beans and pasta.

For the beans I  began by opening a can of green beans and draining the juice into a measuring cup.  I then used half of the juice to dissolve a beef bouillon cube.  I then placed that along with Worcestershire sauce, soy sauce,some butter, the beans and some pepper into a saucepan.


I let that simmer for 15 minutes, and then placed it in a serving bowl.


For the chicken pasta I just used a pasta mix and followed the directions on the package.

So, overall the tally is:

Crispy chicken- it was alright, nothing special
Green Beans- WONDERFUL
Chicken pasta- it was alright, nothing special






Sivada's Cupcakes

Sivada's is a local cupcakery, and in my opinion they are the best!!  Everyone I know that has been there agrees!! 


My husband got out of work early on Good Friday and suggested that we go to Sivada's.  You cannot say no to an invitation like that!! We got 6 cupcakes.  I got the Creme Brulee, Coconut and Boston Cream.  They were all fantastic, but my new favorite is definitely the Boston Cream!!

Easter weekend

My sister-in-law came and spent Easter weekend with us & we had a lot of fun!!!  We went to Crosby's Seafood House for dinner on Saturday night and we all really enjoyed what we ordered. 

When we got back from dinner we decided that it would be fun to dye some eggs.  I had boiled some eggs earlier in the day, so they were all ready to go.


I added some vinegar and food coloring to plastic cups and then I added boiling water to them.  I then added an egg to each cup.


I waited about 5 minutes and then took the eggs out of the cups and then repeated the process with the remaining eggs.

We all thought that they turned out beautiful!!

On Easter Sunday we had brunch reservations at the Crab Cake Factory.  It was very good!!  They had a lot of different types of food and none of us left hungry!!


When we got home I decided to call my family back in Michigan to wish them a "Happy Easter".  While I was talking to my grandma I heard eggs cracking.  I came out to the kitchen to find my husband peeling all of my beautifully decorated eggs.  He then requested that I make deviled eggs.

So, I began with peeled hard boiled eggs.  I then sliced them in half length-wise and placed them on my egg tray.

Then, using a spoon I scooped out all of the yolks.

I put the yolks in a separate bowl along with some miracle whip, mustard, vinegar, milk and a pinch of sugar.  I then mixed until everything was combined.  I then put the mixture into a pastry bag with a star tip.


I then filled all of the eggs with the yolk mixture.

I then sprinkled the top with paprika to finish them off.

They must have been good, because there were only 2 left the next day!!


Chicken Tetrazini

Good Friday I made Chicken Tetrazini for dinner.

I began by cooking 2 chicken breasts and then cutting them into bite size pieces.


I then broke 8 ounces of spaghetti into small pieces and then cooked them.


I then mixed together heavy cream, chicken broth, flour and salt and pepper.  I then cooked it over low heat until it was bubbling, stirring it constantly.



I then added the chicken and a can of sliced mushrooms to the sauce.

I cooked it until it was warmed through and then added the cooked spaghetti and mixed until thoroughly combined.  I then poured the mixture into a sprayed 9x13 glass baking dish and cooked it at around 350* for 45 minutes.

Chicken Tetrazini- A hit (my husband loved it, I didn't eat any of it)

I ate pizza instead:


My husband got out of work early on Good Friday, so we went to a cupcakery and on the way home he insisted that we stop at a new pizzeria to pick up a take-out menu.  He went in to just get a take-out menu and ended up ordering a pizza.  I ate 2 pieces of the pizza and was full.  My husband ate more than 2 pieces of pizza and still ate some chicken tetrazini :)

Honey Mustard Chicken again!!

Wednesday for dinner we had Honey Mustard Chicken.  I didn't realize it was the same exact meal that we had a few weeks ago, so I'm not going to go over everything again.  But, it was fantastic!!

Last night we had Krystal for dinner.  For those of you that aren't familiar with Krystal it is similar to White Castle.  Krystal's mainly serves mini sandwiches or "sliders".

Baked Ziti

Last night's dinner menu:
Baked Ziti
Garlic Bread

I began by browning garlic in a skillet with a little bit of olive oil.

When the garlic had browned I added my ground beef and cooked it until it was browned.

I then drained the meat and then added Oregano, Rosemary and Thyme.  I cooked them until it was fragrant.  I then added a large can of crushed tomatoes and some salt and pepper.

I brought the tomato and meat mixture to a boil and then turned down the heat and let it simmer for several minutes.

While the sauce was simmering I cooked my pasta.
When the pasta was cooked and drained I began assembling my ziti.

I began by placing enough of the sauce mixture to cover the bottom of my 9x13 glass baking dish.  I then put half of my pasta on top.
I then added some mozzarella cheese and half of the remaining sauce.  I then repeated the steps by adding the rest of the pasta, the rest of the sauce and more cheese.  I then put it in a 350* oven and let it bake for 30 minutes.

Breakfast

Last night's dinner menu:

French Toast
Bacon
Sunny side up Eggs

I began by cooking the bacon.  I arranged the bacon onto two baking sheets.
I then baked them in a 350* oven for 12 minutes. 


I then took them off of the pan and placed them into a serving dish that was lined with paper towels.

Next, I began preparing the ingredients for my french toast.  I combined eggs and milk in a pie plate and also gathered my loaf of Pepperidge Farm Brown Sugar Bread.


I dipped each piece of bread in the egg mixture and then placed them on my electric griddle to cook.



I then cook them until both sides are golden brown.


My husband volunteered to make the eggs for our dinner, so I let him.  He doesn't like it when I take picture of him cooking so there aren't any.

So, overall I would say that the tally is:

French Toast- A definite hit!!

Bacon-  A hit!!  (my husband prefers bacon & I prefer maple sausage links)

Eggs-  A definite hit!!
