Butter Chicken

Last night I made Butter Chicken & Mom's Favorite Green Beans for dinner.

I began by crushing about 20 ritz crackers into a bowl and adding salt and pepper.  I then beat 2 eggs into another bowl.

I then took 3 chicken breasts and dipped them in the egg wash and then into the crumbs until they were completely covered.  I then placed them into a glass baking dish.

I then cut up half cup of butter and placed it around the chicken in the pan.

The chicken then baked in a 350* oven for 40 minutes.

While the chicken was baking I made the beans.  I began by opening a can of green beans and draining the juice into a measuring cup.  I then used half of the juice to disolve a beef bouilon cube.



I then added the canned beans to a small saucepan along with the following ingredients.

I then added the juice and beef bouilon mixture and brought the beans to a boil.  I then reduced it to a simmer and let it simmer for about 15 minutes.


When the beans had finished cooking I placed them into a large bowl.

So, overall I would say that the tally is:

Butter Chicken- A definite hit!!

Mom's Favorite Green Beans- A definite hit!!
