Last night I made Turkey Meatloaf Muffins and Mashed Potatoes for dinner.
I began by prepping the meatloaf. I cooked onions, mushrooms and garlic until they were soft and then added soy sauce and cooking sherry until it formed a paste. Then I added parsley and cooked until it was aeromatic. I then combined the vegetable mixture with the ground turkey.
Next, I put liners in my muffin tin and put a spoonful of the turkey mixture into the liners.
Finally, I baked them at 350* for 27 minutes.
Next up Mashed Potatoes!!I used red skin potatoes. I began by peeling them and cutting them in 1/4.
I then put them in boiling water and cooked them for about 20 minutes.
When they were tender I drained them and put them into my mixer's bowl with butter, salt, pepper and buttermilk.
I mixed them up until they were the consistency we wanted.
My husband made the gravy to go with the potatoes and meatloaf.
He mixed a gravy packet with chicken stock and a little bit of chicken bouiloon, and cooked it until it was boiling and then let it simmer for a few minutes.

So, overall I would say that the tally is:
Turkey Meatloaf Muffins- A hit!!
Mashed Potatoes- A definite hit!!
Gravy- A definite hit!! (because my husband made it)
